With full school and work season upon us, we find our routine differing greatly from the summer months. Getting the kids to bed on time, making sure they get up (with hopefully no fuss), and out the door with their lunches in hand. It is a lot to deal with, but you want to make sure your child is ready for their full day of school.
With limited time in the mornings, many are looking for quick, easy, and healthy breakfasts for their kids. Breakfast is the most important meal of the day and you want your child to have the best! Well, they can, even without all that fuss and prep.
These breakfast fruit parfaits layered with Greek yogurt and topped with granola are perfectly customizable and hearty. Choose any fruit you like and combine it with the yogurt flavour of your choosing. The granola can be homemade or store-bought, so it definitely fits into your lifestyle. These are super easy and ready within minutes!
Breakfast Fruit Parfaits
1 container vanilla Greek yogurt (or flavour of your choosing.)
2 nectarines/peaches, one diced, one sliced.
1/2 cup homemade or store-bought granola
1) Grab 2-4 parfait glasses and line them up. Place a dollop or two of yogurt into each of the glasses (no measuring here, it is however much you desire!) Divide the peaches among the glasses, being sure to keep four peach slices for garnish. Some prefer slices, some prefer chunks. It is all up to you. Finish by topping with granola.
2) Serve with the garnish of peach slices on top.
Another positive about this recipe is that they can be made in advance if you are really short on time. Place the yogurt and fruit into the cups and cover with plastic wrap. When ready to serve, top with granola.
And there you have it! An easy, healthy breakfast that is also hearty and customizable. The perfect recipe for people with allergies and dietary restrictions. Breakfast the whole family can enjoy!
