Being a university student has its perks (more freedom, you’re basically legal, you only take the subjects you want to take), but it also has its downsides. Trying to afford decent groceries and meals is one of them. It’s one reason macaroni and cheese is a prominent part of the university student on-a-budget-diet. Whether it’s Kraft Dinner or a simple homemade recipe, this cheesy pasta is a quick and easy meal. But that doesn’t mean it has to be routine and boring.

1. Macaroni and Grilled Cheese Sandwich
Grilled cheese sandwiches are one of the simplest and cheapest meals you can make. Add in some mac to the mix and you’ve got yourself an even better, heartier, cheesier sandwich.
Cook the macaroni and cheese the way you usually would, then place it in between two slices of bread, add another slice of cheese inside, and grill it for 2 mins. on each side. If you’re feeling really fancy, add some bacon or pulled pork as well, before grilling.
2. Macaroni and Cheese Egg Rolls
Deep-fried macaroni balls exist, but so do deep fried macaroni and cheese egg rolls.
Once you’re done cooking the macaroni and cheese, place a small amount inside an egg roll wrapper. Wet the edges of the wrapper with water, and with one corner facing you begin to roll over the filling. Fold the sides in and keep rolling. Once you’ve got your egg roll perfectly wrapped, deep fry it in some oil until it’s golden brown.
3. Mashed Potato Macaroni and Cheese
Why have these two on the sides when you could just have them together? Just make some mashed potatoes (whether instant mix or actual potatoes) plus some macaroni and cheese. Top the mac with the potatoes, toss in a vegetable of your choice (cheapest options are usually broccoli or corn) and dig in!
4. Macaroni and Cheese Stuffed Baked Potato
This dish only requires to simple jobs: bake a potato and cook the macaroni (it’s easier if you cook the macaroni while the potato is baking, that way it doesn’t get cold). Quick tip: baked potatoes are easy to get at the grocery store as they’re already pre-wrapped in foil. Once it’s baked, slice the potato open to create a little pocket to put the macaroni.
5. Macaroni and Cheese Burrito
It’s one of the easiest meals to make. Cook the macaroni and cheese and place a portion inside a tortilla wrap. Add meat (pulled pork, chicken, or bacon are usually the best additions), sprinkle some more grated cheese onto the filling, and roll it up like a burrito.
