The time is two o’clock, in the afternoon, and you’re ready to crash! You’ve been up since six a.m. and have already marked the following errands off your to-do list: made breakfast, dressed the kids for school, got lunch boxes ready, dropped kids off at school, laundry, vacuumed, grocery shopped, more laundry, went for a jog, walked the dog, did the dishes, dusted, mopped.
At this point, you’ve just finished your second venti americano, and because you need to recharge the mommy batteries, you either need another cup of coffee or you need to take a nap! But, let’s be honest, girlfriends, who naps? So, you’re now heading to Starbucks convinced that café numéro trois will give you the energy you need to function for the remainder of the day. Stop. Right. There. It’s glow time, amiga! Two o’clock is officially salad time. Tried and true, sexy mommy. Head over to your fridge and let’s start chopping up those vegetables because I have some great pick-me-up energizing salad recipes for you that will leave you glowing inside and out. Here’s the best part: each of these energizing salad recipes take under five minutes to make and are made with the same dressing!
Parsley, loaded with vitamin K, C, A, just to name a few, anti-oxidant rich and great for the heart is often over-looked. Well, this salad is all about this awesome green veggie. Chop it up, add red onion and sprinkle some olives on top. Dress up with extra virgin olive oil (EVOO), fresh lemon juice and sea salt. You’ll be up and running in no time after this salad. Let’s glow, sexy mommy!
Fun Tip: Use kitchen scissors to chop up the parsley.
Grab two tomatoes, rinse and chop. Now, add red and green onion, sea salt, EVOO and lemon juice. This salad will give you loads of energy and a healthy glow right into the evening hours. Let’s take a second to talk about tomatoes: vitamin C, A, K, B6, B1, B3, E (the list goes on!) cardiovascular and bone health support. Are we glowing yet? We sure are!
Lettuce, cucumbers, red onion and an avocado! Avocado is rich in fiber, vitamin K, B6, E, C, copper, promotes heart health, wide-ranging anti-inflammatory benefits and regulates blood sugar.
