I betcha can’t guess why these gorgeous brownies are guilt free. Follow my recipe and you’ll be gobbling away at these chocolate chunks a week. No flour needed because instead we are going to swap it out for…drumroll please…BLACK BEANS.
Wait, what? Hear me out, I’m not crazy. It tastes really similar to the real thing and no one can say anything when you throw three back.
– 1 3/4 cups of drained Black Beans
– 3/4 cup of Cocoa Powder
– 2 Large Eggs
– 3 tsp of Olive Oil (or coconut oil)
– 1 tsp of Pure Vanilla Extract
– 3/4 cup of brown sugar
– Pinch of salt
– 1 1/2 tsp of Baking Powder
– Dark (my favourite) or semi-sweet chocolate chips
Step 1: Blend your black beans
Then toss in the rest of your ingredients except for the chocolate chips and process away! If you don’t have a processor, blend the black beans first and add a bit of water or else it won’t blend.
It should look like this mess of a chocolatey paste. The ingredients together will be super dry so add a bit of water to process it all nicely. Not too watery!!
Step 2: Plop your batter into a muffin tray
Instead of greasing the sides, simply use cupcake holders to contain your brownie batter. Look delish already?
Step 3: Sprinkle with chocolate chips
Yes, the amazing moment when you can add some not so healthy stuff and give your brownies that extra chocolate kick. Can’t wait to bake!
Step 4: Pop into pre-heated oven at 350°C
And bake for 20-30 minutes. Take out and let it cool for another 20 minutes but we won’t blame you if you sneak a chocolate chip off.
Enjoy your guilt free BLACK BEAN brownie! You can top it off with some coconut shavings, walnuts or chocolate syrup. These desserts are packed with fibre and protein thanks to the almighty black beans.
