Quick, Easy Meal: Rosemary Steak

In university I came up with a number of quick one-woman meals that were both healthy and delicious. Rosemary steak, sautéed spinach and seasoned rice was one of my personal faavourites. This meal is particularly awesome because it’s well rounded, with a healthy serving of all your food groups. It sounds too be good to be true, but I promise it isn’t. The rosemary steak is the centrepiece of this meal, which I like to accompany with sautéed spinach and seasoned rice. If coordinated properly, this meal is 20 minutes from fridge to table. Pro Tip: For your first step, start boiling your rice before you start you making your steak. Cook the steak, and finish with the sautéed spinach, which should be ready just as the rice is finished boiling. This way, all your food is hot and ready to go at the same time! (Spinach cools quickly, and is infinitely more delicious hot.)

Rosemary Steak

  • 1 eye of steak round
  • ½ tbsp of rosemary
  • 1 tsp of sea salt
  • 1 tsp of black pepper
  • 1 tbsp of olive oil

Brush olive oil onto each side of the eye of round. Sprinkle sea salt, black pepper and rosemary onto each side of the steak round. Place steak round into heated pan, and cook for 4 minutes on each side. Cook for an additional minute or two on each side to get to desired level of doneness – I prefer this rosemary steak medium rare. (To check if your steak is medium rare: You press down in the middle of the steak to judge how soft it is. If you put your middle finger & thumb together and press down on the fleshy area below your thumb – this will give you an approximation of how firm the middle of your medium rare steak should feel.)

Sautéed Spinach

  • 1 cup of spinach
  • 1 clove of garlic
  • 1 tbsp of olive oil
  • A pinch of salt & pepper
  • A drizzle of lemon juice

Wash spinach, and thinly slice or crush garlic. Heat olive oil in pan, add spinach, and sauté in oil for 30 to 60 seconds. Add garlic and sauté for a minute or two more (don’t let the spinach get too wilted.) Lastly, take spinach out of pan and place onto plate — for the finishong touch, sprinkle with salt & pepper and drizzle with lemon juice.

Seasoned Rice

  • 1 cup of long grain rice
  • 2 cups of water
  • ¼ tsp of salt
  • ¼ tsp of black pepper
  • ¼ tsp of garlic powder
  • ¼ tsp of cumin
  • ¼ tsp of paprika

Boil water, add in all seasonings and rice, bring stove to a gentle simmer cook in covered pot – rice should be done in 15-20 minutes.

So there you have it! From rosemary steak to sauteed spinach, each component of this meal is both easy and quick to prepare, and uses fairly standard ingredients you can find around your house. Enjoy!
