Remember the Watermelon Keg Tutorial we showed you last time? This time we’ll show you how to make a refreshing salad with the meat you shanked out of the inside of the watermelon! If you’re in need of a quick recipe that will take you less than 10-15 minutes to make then look no further. Use this season’s absolute IT fruit in a refreshing twist of a salad to entertain your guests or keep yourself hydrated this summer.
This is a great alternative to make for your backyard parties and it’ll keep your guests hydrated in that summer heat! Instead of making a fruit platter for dessert, your guests will get both fruits and vegetables in one dish (we’re trying to help you out here). So if you’re ready to try this delicious summer salad, grab these supplies and let’s get started!

First things first, cut the watermelon up in to manageable chunks. Try not to make the cubes too small or else they’ll fall apart when you’re tossing the salad and you’ll be left with a watermelon smoothie instead of a salad. If you can get orange or yellow watermelons, try mixing up your salad by incorporating other colors as well.
The next step is to cut up your cucumbers into roughly the same size and shape as you did with the watermelon. You can choose to use less or more cucumbers if you’d like the watermelon to stand out more. I personally don’t like peeling my cucumbers and think that the skin adds another depth of color to the salad.
Although mint is lovely and fresh taste, you don’t want it to overwhelm the sweetness of the watermelon. It’s important to chiffonade (finely shred) the leaves before adding them to the salad so that the flavor is evenly dispersed.
To offset the sweetness of the watermelon and cucumber, you’re going to squeeze 4 limes and collect the juice to be used as the dressing. If you find that the lime juice is too sour, you can toss in a little big of sugar to tone down the flavor.
So now that you’ve prepped all of the ingredients, it’s time to put everything together. Place the watermelon and cucumber cubes into a bowl and drizzle the olive oil and lime juice over top. Sprinkle the mint leaves and feta cheese over top and grind some black pepper to finish. Now’s the time to snap a quick picture for Instagram (it won’t look as pretty after you toss it). Then toss up the salad and serve to your guests!
